Umm... WHAT?!?!


My girls have had a lesson about battery acid.  You see, several years ago (as in quite a few severals) we pulled a game off the shelf that had not been played with in quite a while.  As the girls were taking out all of the components of the game, they noticed something weird on one of the pieces.  It was battery acid.  Well, as any good mother who wins all sorts of "Mother of the Year" awards would do, I seized the moment and began to explain in great gory detail why they are never EVER to touch it! If they ever see any acid, they are to immediately bring me whatever they have!  (Boy, did I ever put the fear in them about battery acid and how it would eat away ALL their skin~ 'cause you know, sometimes you have to really make an impression to prove your seriousness!)  Well, one morning before school Libby, then age 5, came running down the stairs hollering "MOM!!  MOOOOMMMM!!"  As I ran to meet her at the stairs to see what all the commotion was about, I noticed she was holding a flashlight in her hand.  She was rambling on 90 mph about "that stuff"!!  When I went to take the flashlight out of her hand, she quickly pulled back and with great urgency began shouting "NOO!!  NOOO!!!!   YOU CAN'T TOUCH IT!!!    IT HAS ASS MOLD!!!"
Ummm... WHAT?!?!?!   She was trying to show me it had battery ACID on the outside!!  OMGSH!!!
Needless to say, we all about fell over laughing!! Ass mold... hmmm... That's what we'd call a "Libbyism" at it's very finest! ;)

I seriously love to reflect back on the funny things my kids used to say!  Even in their teenage stage of life, they still come up with some of the funniest things I've ever heard!   
How about your kiddos??  Do they have "ism's" like my sweet Libby??   I'd love to hear some of the things your kids have said!

And I now need to update my super fun blog... *ugh... just shoot me now....

Whew! This week is almost over...

Hi there! Well I think it's safe to say I have sort of dropped the blogging ball this week for sure! Sorry about that... This was my first week back to work since summer vacation and boy oh boy, has it whooped my bootaaayy!! I get GREAT fulfillment being a preschool teacher, but I have to be honest... I am mentally spent right now! I will, however, be recharged, refreshed and rarin' to go SOON! :). In the mean time, I will leave you with a little teaser.. Versatile... Awarded... Who me?!

Lindsay, over at Little Mudpies just awarded ME.. as in MY BLOG.. with the Versatile Blogger Award!!  Can you even believe it?!  I think I may be a little speechless...Not to worry, those moments don't last for very long  ; ).  It not only means so much to know that someone really likes what I have to offer, but they want to share it and acknowledge it!!  Wow!

1)  My brain is full of information that seldom has anything at all do with any situation I may ever find myself in or may ever have a use for.  (I'm thinking this may be the reason I can never put two thoughts together... all this useless crap keeps getting in the way!)

3)  I spend most of my time walking around in circles wondering what it was I was doing or what it is I'm supposed to be doing, and somehow... I manage to function.

4)  I am a born and raised Louisiana woman and I take great pride in my heritage. 
(which translates to YES, I suck the heads of crawfish!)

5)  Sometimes I say things that may make absolutely no sense to anyone but me. And I'm perfectly ok with that!

6)  I can never really make up my mind... but when I do... LOOK OUT!  It's Katie bar the door.. full steam ahead!

7) And last but certainly not least... I laugh (out loud) at myself... A LOT! Like probably more than what would be considered normal.... because I really do think I am THAT  funny!!  ; )

C'EST SI BON

I love to cook.

That is, I love when I create things in the kitchen that turn out so delicious, I surprise even myself! I like to put odd ingredients together and just see if it will create what I think it will create. Because I am new at blogging {and because I have a rare condition of forgetting to do whatever it is I was thinking I needed to do only 5 whole minutes ago..}  I have yet to remember to take photos of  ev- er- y- thing... I don't have all the steps photographed, BUT what I do have is this SUPER DUPER easy yummy little dish that I whipped up with left over sauteed shrimp from last nights Shrimp Baked Potatoes.  (yea, they were really delicious too) And just so you know, I love very few things more than shrimp.. or anything seafood really! I am, afterall, from Louisiana and if ya can catch it.. we certainly can cook it!   :9


SHRIMP AND GRITS


Is your mouth watering yet??

Start with about half pound to a pound of shrimps~ peeled, deveined and cut in half (if you want to stretch your quantity of shrimp).  Season well with Don's (or a cajun seasoning of your choice. I happen to LOVE Don's ~ even more than Tony Chachere's)  I also added a little garlic powder.. only because I really love garlic powder...

 

Melt about 1 Tbs. of butter and 1 Tbs of Organic Coconut Oil  in a nonstick skillet on medium high heat. Squeeze in some fresh lemon juice, or you can cheat like me and just use True Lemon (BEST. INVENTION. EVER!) 



Add shrimp and saute for about 4-5 min or until no longer transparent.  Do not overcook. They will become rubbery very quickly.. and who wants rubbery shrimp?!

Now, because I was just rummaging thru the kitchen trying to whip up something to eat, I decided to make it as quick and easy as possible. (Remember, my shrimp were actually left overs from last night.  I just nuked em in the microwave real quick like to heat em up)


Please don't judge my culinary quickies.. Yes, I used generic instant grits! Oh the horror!
Just take you a packet or two (hey, however much you wanna eat is up to you and your hungry tummy) and cook it like the directions say. I always add just a little extra water because I like my grits soft.


And now for the Pièce de résistance... {as if the shrimp weren't enough}

Seriously people... Jalapenos AND sour cream?!  Oh yea... The fat lady most DEFINITELY sang here!!  
I added a dollop to the grits and gently mixed it in!  Mmm.. Hmm..
Oh, yes I did!  
I plated my grits, topped it with my shrimp, drizzled some of that oh-so-yummy juice over the top and added chopped green onions for a little color and flavor!  
 Make ya wanna slap ya momma! It will...
